chisel ground blades

Agreed. My post was in response to the statement that "Better cuts, easier to sharpen, overall stronger blade because you have more stock." A 15° chisel grind does not provide "more stock" than a 15° (each side) double bevel (30° total). That's the only point of the post. I suspect that an X° chisel grind would support the edge equally as well as a 0.5X° (each side) double bevel (X° total) despite the slight difference in geometry at the cutting edge. As for cutting performance, that depends on the application.

You are correct. It takes a hell of a lot longer to grind a 15' degree chisel grind vs. a 15' degree per side totalling 30 degree double grind. You have to remove many times more metal.
 
Let's forget everything for a second and just look at this. Below is a picture of an X degree chisel grind, and an X degree double grind. Both have the same geometry, with exactly the same amount of steel behind the edge, as far as I can figure.

Now which one will cut better? Tilt your head a little and I think you can see they both will cut identically - given everything else being equal.

It appears the only difference is the angle at which the handle lies relative to the bevels. And the only difference in cutting is the direction of the force that is being applied. That they seem to cut differently is a result of these (or wedging force differences due to blade geometry well behind the edge). I realize this is a simplified look, but often that is a good way to look at things, I think.

I think if we made knives out of the two grinds, and made them exactly the same thickness along the width of the blade, they would cut equally well.

Unless one of your definitions of chisel grind is that they are thicker closer to the edge than a conventional grind, they should cut the same.

But pretty much all chisel grinds are thicker, closer to the edge than conventional grinds. So in the real world, there is a difference in cutting ability, mainly because one is thicker closer to the edge.

So I guess it depends on what you mean by chisel grind.

What do I need a forum for anyway, I don't even need you guys - I can even have disagreements with myself.
