For traditional slippies, you can't be Alsdorf, Davison, or Menefee. For locking knives, Burger makes a fine folder called the LEXK. I also like Keith Ouye for a classy locking folder. Darrel Ralph is classy in his own right, but his knives are not what I would place in the realm of gentleman-like, which is what I gathered the OP was asking about.
Also forgot to add Pena and Wiseman (also on these forums like Alsdorf, Davison, and Menefee) to the list of traditionals.

I've got a carbon No.8 and a stainless No.6 and once you get those locks to turn smoothly and the knives to swing in and out quickly, they are fantastic. I mean, that Chaperone... holy smokes!
