Coated or uncoated depends on the intended usage of the knife in my view.
If I am going on a guided Elk hunt in Wyoming, I would bring along any knife that will do the job . . .probably uncoated, maybe csrbon steel . . . it is not tht big as deal as long as the knife will do what is necessry along the way.
However, if I am buying serius cutting tool for someone close to me who is about to deploy into an actice combat zone, I would be looking dor a coated knife . . .or at least a blade that is dulled down from a high polish. Nearly every serius knife maker (with notable exceptions) offers their "tactical" knaves with a dull finish or durable dark coating.
It isn't a one or another . . .it is a what iw the usage thing.
