Competition Cutter Preorder

I meant that if you are a skilled cutter and don't mind a little bit of risk you should get the thin version. If you're not a skilled cutter or if you are risk-averse, meaning afraid you might ruin your knife, you should get the thick version. The thin version is more fragile than the thick version so using it in a difficult cut is riskier.
 
Thanks Nathan. I'll stay with one of each. Learn on the thick edge until I get some experience.

Things start looking weird once they get specialized

Dan Keffeler has big muscles but he isn't actually a particularly big dude, his frame and hands are quite average. The grip feels pretty large, but it's that way for a reason offering power and control. It's a specialized grip. Other grips we do are designed to be held in a number of different ways, but the CC is dialed in very specifically.

Nathan the Machinist Nathan the Machinist Nate, how easy is it to turn the thick edge CC to racing edge myself next time? Is this just a matter of the resharpening the edge at a smaller angle or do I need to regrind the bevel?

I definitely don't need one, but I did need a medium chopper!!! :D To join my light chopper(all time favorite chopper)
