Ultimately, you want a narrow blade and a slightly more obtuse edge for strength.
But I don't see that you need to radically reprofile the entire primary grind to 30. You may not have to reprofile at all if the marker shows you are putting a good 40 degrees on the edge.
The shoulder would be where the primary bevel and the flat of the blade meet. It's also where you'll start to meet resistance after the blade has initialy cut the material.
IMO, you are doing your future self a favor by taking the time to reprofile initially to 30 degrees.
A microbevel at 40 degrees will form very quickly and will be maintained very easily since you are removing a very minute amount of steel as opposed to the entire edge if you only reprofile to 40 and keep it there.
