That’s easily the most amount of work I’ve ever done with a knife. I did the vast majority of the primary cutting, separating legs joints and wing tip joints, with some other work thrown in as well.

About halfway through, the FK2 would still shave. It had a solid working edge on the front section with the most bone contact at the end of the day. That’s after about 500 joint cuts/separations I likely did (5/bird).

Everyone else was sharpening throughout the day. No touchups on the Field Knife. Helluva knife.

Developed some nice patina staying wet in chicken juice all day!
