CPM 125v

I'm almost done sharpening my ZDP Caly 3 at seven degrees per side.
The edge bevel is almost flat with the primary grind.
Very exciting.
Though, I'm starting to learn that any steel I try to sharpen flat with the primary bevel has an edge that acts like tinfoil. Hopefully there will someday be a steel type that can be sharpened at less than five degrees per side.


There is, my Takeda 240mm Gyuto in Aogami Super Blue came at about 4.5 per side from the factory. I now sharpen it at a nice even 4 per side, and it works fine for kitchen work as long as you don't hit bone or slam into a poly cutting board. My ZDP Caly Jr goes at 5 per side, but with a 10 per side microbevel. Precision cutting only, but plastic clam packs and cardboard, along with rope and other normal EDC cutting chores are no problem. Which reminds me that I have to sharpen my Krein M4 Ultimate Caper at 5 per side to see how it likes really acute angles. At edges that acute there isn't much room for slop in your cutting, but there are steels that can handle it for lighter to light medium duty cutting with decent technique.

Been using cpm-s125v for 10 years, it's one of the best steels I offer, the other high carbide steel I offer is cpm-15v.
Both are incredible.
