Hi Guys, Just finished this up this morning and brought a little buddy in to help with the pics!
I bought a camp about 9 years ago in Northern Maine. It came fully outfitted. In a drawer were a bunch of old carbon steel kitchen and butcher knives. I'm guessing they are between 50 and 60 years old. I've been meaning to do something with them for years. This week I took the worst of them, a 9" butcher knife and turned it into this fillet knife.
The old butcher knife had a patina as deep as the ocean. The handle was missing half of a rivet, was cracked, and just about falling off. It had been sharpened so many times it looked like a recurve blade! I carefully chopped off 3" or so, reground the shape and edge bevel, then sharpened it to a razor edge. I added thumb notches, a finger choil, lanyard hole, and a lanyard. I polished the blade, but I left some old character marks as well. The blade is now 6" long, and the new polished red Micarta handle is just under 4 3/4". I was very careful while cutting and grinding this blade. The original temper was preserved. The blade is very flexible, but takes a VERY sharp edge.
This knife has certainly seen ALOT of use in its life. Now, in the right hands, it should go for another 50 or 60 years or more. I really hope this knife finds a good home. It's got alot of history.
