Dave Loukides (www.prayerknives.com, Bladeforums ID loussharp1) makes some of the best custom knives I've ever seen and definitely the best I own. He specializes in hand-forged pieces using high carbon steel, and they are marvels to behold. I cook a lot and he has made several kitchen knives that I have purchased and use on a regular basis. They're made from 1084 steel, and have "perfection" written all over them, from the flawless distal tapers to the balance to the fit and finish.
