If you have a need to show them your knives, explain how the lock works or show them how to open and close the knife. Otherwise, I wouldn't bother at all which is what I would do unless they ask when I'm using one.

This can be two fold. If you show them how it works, and they see you working the knife in a deliberate careful manner, while explaining something like how smooth it feels, or how the precise the action and lock is, they will be much more likely to emulate your actions, rather than something they saw in a movie.
You can also ask them to please be careful, and not flick it open.
Anyone who isn't familiar with the level of quality, materials or value of a knife I happen to own, I will open and close it for them, then hand it to them.
My brothers, who are not necessarily into knives, but know quality, I'll hand it to them closed, and watch them figure it out. Same as with a known knife knut.
