Some say don't use a knife on a china plate but I do. I love how a sharp knife slices meat.

Well yeah, how else you gonna eat the meat on a fancy occasion? Pull ot apart?

Scissors/clippers work much better than knives for many things. It is nice to have scissors at hand.
