I have a convexed 14 (Thanks Vik!) and I have a V grind 11. I took the 11 to a 15° per side. I use the 11 so much more and I am able to get the 11 back "to sharp" easier. That is me though.

Convexing is a very popular thing around here, I have tried it. I just personally prefer the V. Using the KME sharpener is really the easiest sharpener I've used.

yah, if you can get a good edge with your KME or whatever method you use then stick with it. It all breaks down to preference. I dont use guided sharpeners but do freehand I couldnt tell you what edge degree my blades are at, but its just how I work. And my blades all vary a lot at the edge, I go out, use the blade, and take the edge how it needs to be per my experience. Its just how it works out with me and inevitably with free hand you get a bit of convex. I just have been exaggerating the slight convex a bit and I love how it turns out. I am able to take a dull blade to shaving very quickly when I have modded the edge like I do naturally. Like I have said before this all breaks down to personal preference and what your mileage/experience tells you! So good on you for sticking to your guns :thumbup:
 
There is no doubt in my mind that most people who take their deer in to a locker get ripped off. Most of the places I know of charge by the head, not by the pound. They don't care if you get the most meat possible, because there will be another deer come in shortly after yours. Quickest, most time efficient method is what they are after.

Shot-to-pot, my buddy calls it. butcher at home if you can. No bandsaws or other icky things to contaminate the meat. It seems to take me about two days to disassemble and pack a deer into the freezer. What a GREAT excuse to use the knives!

I actually prefer the V grind than a convex. I'm able to put a great V edge on my knives than a convex edge.

Just stabbed my own finger with a spork while trying to wash it.... I guess I'll just ride the short-bus home today
 
soft-core nail buffer.

I use these for sharpening smaller knives, on 1 i kept it as is, I took another one of the blocks and hot glued wet/dry sandpaper on it from 500-1200 grit. Works great.

No, not at all, however it was a decent enough attempt to change the topics. I was getting really tired of two straight pages of Busse talk... Every snark thread seems to devolve into talking about SR101 or 52100... Before a month ago, I would have assumed 52101 was zip code and SR101 was a new Spy/Reconnaissance plane.

I just know it is what works for me. I'm also pretty good at guestimating what edge angle is "good" for me. I know with my 11 I'm not going to be doing massive chopping or heavy duty work, I use it for finer and smaller jobs so I go with a sharper angle (15-18° per side) whereas with my "big toys" I go with a more obtuse angle (24-27° for the BK-7 and 9)

I have no idea how to sharpen convex other than with the sandpaper people keep mentioning

I've gotten two of these from you. I've used them for the knives from you, but I really dunno how effectively I use them. I use them like a strop basically

That's exactly what I do. Refills are at the big chain drug store that's headquartered in my state.


The lights just went off on me in my office. I have to get up, leave my high-wall doored cubicle to activate the motion sensor again!

Somebody dropped something upstairs before I could get up and the lights came on again.

I'm guessing it is the 3 letter one? Since the one that is "Vertical plane 008000" is based in Deerfield, Il

We could talk about the merits of splitting the pelvis bone of deer during field dressing or leaving it intact.

I like to split a deer pelvis or two, whenever I get the chance. Know what I mean ? Wink, Wink, Nudge, Nudge.
