Dyed Handle Materials

Cool. Now that I think about it, I've seen a bit on western style kitchen knives. Does stabilized wood qualify as "food safe" or has that not come up?

If you mean NSF Food Safe, I don't think so? You would probably have to get a state by state ruling on that?
Kirinite the Acrylic available from USA at knifedogs.com is NSF rated. If it's going to be used in someones home I don't see an issue.

Commercial kitchens in many states its suppose to be a NSF rated handle and stainless blade. Most Chefs won't take the knives I make for them to work even if the own the place because stuff gets stolen so fast!
They use them at private parties that they cook at and at home.
