The person will lose calories, but there will be plenty of protein left in them. Crack them bones for marrow, lots of phospholipids in the brain, liver might be a bit shoddy.

I only ask becasue I recently to to work on medical cadavers(sp). I took away so much about the human body that day, but one side effect of getting to learn so much is that now when I see a quick fry steak I think of the serratus anterior, I haven't been eating meat for a while anyway but now it almost make me sick to think of eating human, but if it meant I could see my kids again...
