Lionsteel T.R.E. this week in rotation. Had some fun in the kitchen yesterday evening :). Swordfish was looking good at fish market :D. Made some swordfish steaks. Sliced the lemons, trimmed the skin and chopped some dry chives and garlic. Good to go in the oven.

Nice edge! How far do you usually go with the WE? I used to get all crazy with the strops, but now I usually stop after the 1600 grit ceramic, sometimes take it further with sandpaper strips.

I usually go past the 1600 up to the 1.4/0.9 micron ceramics and then just do a quick stropping with balsa wood strops loaded with 0.5 and 0.25 micron diamond paste. I usually maintain the edge by just freehand stropping using 0.5 micron green compound on a flex strop.
