Im with you my friend. After my last couple weeks my Doc told me Im done bacon and sausage. Im pretty sure he said all processed meats but I heard bacon and sausage….

Look into Old world style salami, I'm not sure If they use anything worse than salt...?
I'm talking about the kind that are lacto fermented. Like they did a thousand years ago.

We had a artistional butcher/maker who did this old school style.
The FDA shut them down because the lack of chemicals.

It's a unique flavor, I like it. They said the sausages will literally last forever.

I have a few of them still left, I thought about selling on eBay as collector items....haha.



Anyhow....... They might be "healthier" ?
They definitely have probiotics.

Every so often we bulk order from a German butchery in Wheeling IL, called Siglmeier, who use traditional recipees. They package fresh, cooled and in styrofoam when shipping. They are excellent ... for example, their "Grilled Bratwurst" only includes Pork, Veal, Water, Salt, Spices, Sugar, Lemon Rind, Sodium Phosphate, and Dextrose (NO Nitrides). Might be OK ?

Thanks Roland! That’s a great tip. Im about to completely re-think / re-build my diet so I appreciate that.
