I resharpened the Saira to 36 full degrees. Having previously cut some glass and wood. There are 60 Rockwells on the blade, the knife cuts a wine bottle. The steel is dry, sharpens well.

I understand that comparing the Saira with the Japanese santoku is stupid.

Glad I was not the only one. I was thinking cast iron skillet one the side burner, sear it really good, then into the grill to slow cook while enjoying a couple adult beverages.At first glance I thought that first picture was a large and complex burger patty!![]()
