I decided to carry Leeks for the past 2 days in a row. I forgot how handy and capable these little guys are. Truly great knives, will cut like crazy for a very long time with their thin edge geometry.

I also forgot they they have different grinds. The composite bladed one with CPM-D2 on the cutting edge (and I can't remember what steel the rest of the blade is) has a saber ground (almost full flat ground) flat grind. The DLC'd one has a saber ground hollow grind that gets super thin behind the edge and stays that way for quite a ways up. A very deep hollow grind that you could sharpen for years and still have a pretty nice thin edge.

A little project for my niece, she had the blanks and scales sent directly to me. I installed the handles and sent them to her while she put together cutting boards. She sold them at a vendor market in Portland. Note: this is two of the 10 she sent.

That was some Kirinite. Had to use fresh abrasives or it would burn and leave dark material.

Thanks ! We'll stay in the cabin for another couple of months though, until the chaos in the house is settled.

On the plus side, all my knives will be there (don't tell my wife, she'll question my priorities ....)
