EdgePro: Holy Crap

If you keep the blade resting on the table in the same position, the edge should be evenly ground.
 
I have a question about the grit of the stones that come in the "Apex Complete Kit" package.

The website mentions 120, 180, 220, 320, and 600 grit stones, with the 320 bing "extra fine" and the 600 being "ultra Fine". What are the units used in these grits? In US units, I consider 600 to be medium and 1200 as the low end of ultra fine.

Also, since they state that the stones are waterstones, is there anything that needs to be done (such as soaking, etc) to prep the stones before use?
 
The EdgePro stones are actually finer than how they are listed. You can get a semi-mirror finish with the 600 grit stone.

Some people like to soak the stones before use. I have found that this leads up to excessive slurry buildup when sharpeing a knife. This slurry can easily scratch a blade and completely ruin it. I simply run the stone under the faucet quickly, then remove any water that is dripping off. I have yet to scratch a blade using this method, and I can't tell any performance differences. After making a pass or two, I rinse the stone off and start again.
 
EdgePros` grits are the US standard grits. See Grit Response

A dry 600 stone can be used as a bridge or crossover to do preliminary polishing before advancing to the polish tapes. I have one 600 that I have never used wet and use it only for this purpose. Seems effective and visual inspection with a loupe seems to bear this out, as the scratch pattern is much finer afterwards.
