Educate me on Opinel..

Great knives! The only downside is if gets wet & the wood swells the blade shut you are without a knife. It happened to me with pocket carry in humid sweaty conditions in summer.

If you get the Inox #8 in olivewood the handle is really good at resisting moisture. Must be the natural olive oil in the wood.
 
It looks as though I have a minority view here but I have never been able to notice any difference between the carbon and stainless Opinels in terms of ease of sharpening or edge holding.

Dude, I only have carbon Opinel, but all my other stainless blades are pain in the butt to sharpen, mostly when reshaping the blade, but carbons are quite easier to work with, not an immense difference but there is a difference.
