EP evaluation thread for Knifenut1013

I'm planning on visiting KN next Fri......so why not have a case of beer, pizza and some wings delivered....that would be reeeeallllll nice.:D

What frustrates me most with the "freehanders" is their arrogance, (most of them, not all by any means) and their attidude that "real" knifeknuts freehand only, and they look down their noses at anyone who uses any other system.

So long as the end result is the same, what difference (other than snob appeal) does it make which system you used???

In my case, I get better results, less frustration, and all in less than half the time, but if you want to hand it out, I'll take the "snob appeal" advantage as long as you insist!

My comments certainly weretn't directed at you, or anyone else in particular, just at the "attitude" that some freehanders display in any of these discussions.

If a person prefers freehand, then so be it. All I ask is don't conduct yourself as if you're a true purist, and those who use (and get equally satisfactory results with) belt sanders, paper wheels, Edge-Pro, Sharpmaklers, Lansky's etc, were somehow lower down on the food chain.

That has never been the case! I can't understand some of you guys, it's as if you're pre-conditioned to "think you are" (lower down on the food chain) and then defend your position, when no one cares and is happy, that you are happy with your chosen system.

And, for the record, I own a Smith's and now a Sharpmaker so I'm a "system" guy and I'm not getting this vibe at all from the free-handers. :confused:
 
Before it takes on another leg, I think it's time for closure of this thread, but I'm not about to "demand" it because I've gotten infraction points for much less.
The person has apologized, what more can you ask for......
 
I think this thread has been very civil, considering the "flame wars" this subject has generated in the past.

I commend everyone who has posted on it. We have been able to disagree amicably, and we might have even posted some useful information. In my reading of the posts, I don't feel that anyone needs to apologize for their opinions. :thumbup:

This thread is almost comical, I do have a closing statement but its going to have to wait until I can get to a real computer. Its also funny how this thread has almost nothing to do with my original comment but I'll cover all that later.
 
You don't just set up a new EP and instantly have hair splitting edges. It takes some practice and the right technique to bring out the best in the EP. My son sharpens lots of kitchen knives for his use at work and for the other guys in the kitchen, he has become a expert on the EP and the edges he gets are scary sharp.

If one becomes really good at free handing, they probably have no use for a guide but even most good hand sharpeners can easily vary a couple degrees, in most cases that is totally insignificant however, it depends on how close of tolerance that you demand in your knives.

The EP can probably make you a expert sharpener faster than any other method but that's just my opinion. In the end, your own opinion is the one that you have to live with.
