Ethics question seguing into knife question...

Have to agree with what most have said here, and it seems you are leaning towards
that after your initial post..... Integrity!!

With that said:
Onion vs. Elite vs. Classic? You should order complete sets of each line, just to be fully prepared for any possible kitchen eventualities...:D

I'd say if you already told him the lower price, you should keep your word and not switch it up just because it;s convenient to you. If you haven't discussed price yet with him, tell him the situation and ask if he'd be okay with buying the 2 at different prices and splitting it down the middle. If that's not an option for him, I'd give it to him at the lower price and save up for my own at the higher price.

Stick to the original deal.

I got a Shun. Fell in love. Got another. Twice as nice. Had to get a magnet bar so that the wife and I could look at them all the time rather than hide them in a block (you gotta be careful with them magnet bars, they can scrape up your knives). So now we have 4 Shuns, the paring, utility, santuko, and serrated carving/bread. The Henckels Pro S knives have realized we don't love them any more and they resent the Shuns.
