It helps keep your knuckles off the cutting board and you just can't trust a skinny chef
1095 steel because it holds an excellent edge and sharpens easily (IHO it slices better than a lot of other steels)
Flat grind with a very slight convex. I rounded the spine for folks that like to choke up on a knife and lay a couple of fingers over the spine.
Rosewood handle with brass and carbon fiber spacers
Overall length: 12 1/4 inches
Blade: 7 inches
Depth at the index finger: 1 7/8 inches
