It's in my opinion always important to give a gift that the other likes, not necessarily the kind of gift you as a giver would like.
In this case, I would rather give him a flashlight, or simply a few good wine bottles, etc.
 
Heres another idea to satisfy the hippie part of the equation, get him the tie dye scaled SAK with the attached roach clip and bowl option.
 
I was thinking maybe a Fallkniven Tre Kronor folder. To nail nicks, so it's not one hand opening (people seem to think this is pretty non-threatening from my experience), 3g steel-never used the stuff, but I've heard it's pretty good, and it's very good looking knife. Lockback too, so he doesn't slip and get his fingers cut, good for gardening I guess?

Hippie? Start him out with a switchblade roach clip. Then next year a switchblade comb for his ponytail. Then next year a real stiletto for dicing tofu. He won't know what hit him.

Since he likes gardening and what not how bout a Svord Peasant knife? Is a great little knife and can be had on the cheap.

Hori Hori knife! Very hippy friendly. It is a Japanese gardening knife that can be used to prune and dig. Package the knife with a pair of bamboo thongs and a book on Zen Gardens. They are not razor sharp, and are not intimidating to sheeple. It may be a good introduction to knives as tools. Then, next year....get him a Spyderco. Maybe if you just buy through REI he will deem it hip to have. Most likely, being a gift from his son, he will value it.
 
I'm going to suggest SAK too, but with some nice custom scales. I believe there are people here who could do it up for you :)
