Favorite Spyderco for Food Prep

I totally agree. However, I am looking for a food prep knife for on the go (i.e., folder) Having young children I am cut up an amazing amount of food being away from home and I don't like to use my regular edc as it cuts some pretty nasty stuff.

Ah! I thought you were talking for use in the kitchen. My bad. If that's the case, get something with around a 3" blade so It will be less likely to get food particles in the pivot. Also if thats going to be the sole use for this blade do you really want to drop the $$ for a GB or PM2 (which would work awesome BTW)? I would see what has the thinnest blade of the less expensive slicers and go with that. A UK has no lock, but you don't need it for what you want. The length is decent and its a thin blade. I would consider a Delica, But I'd worry about a 2.5" blade being a touch short.

The FFG Police 3 would probably work quite well for food prep but, IMHO, the regular Police wouldn't be nearly as good a slicer due to its low hollow grind.
 
Just to throw out another option, the Caly 3.5 is recognized as a great little slicer. If it had 2mm blade stock like the Chaparral, it would really be wicked.

I have been using my South Fork a lot in the kitchen lately. It's still new, and obviously not a kitchen knife, but it's just such a joy to hold that I have to use it :)
 
Obviously the kitchen line or at least a fixed blade like the Southfork (do want) would be the best. If we're limiting the choice to folders, anything with a big, full flat ground blade would do well. A lot of people like the Resilience and Military for food prep for those two reasons, but I like to throw in the Stretch. Decent size, comfortable to hold, and a nice curve to the blade that definitely lends itself to slicing and dicing. And it's nice that it comes in ZDP.
 
I used my mule to cube some roast for chili:

I like 3mm or less for improvised kitchen folding knives. Any of these has worked well when I needed them to. The Mules work great also.

I periodically use my Tenacious for food prep. It is an easy clean up and the thing slices so well!
