Favorite spyderco for food prep?

Hey guys!
I am a bartender, and i cut alot of lemons limes and oranges... what would be your ideal spyderco for such cutting? I used my para 20cp tonight with a 30 inclusive on it, and it blew through them :D. what else would you guys recommend as a good spyderco bar companion?
 
I don't normally use folders for food prep, but the Military is a really good choice. It'll buzz right through lemons and limes and have a long enough blade to cut your sandwich if you have to.
 
I'd say Tenacious or Resilience. I'd patinize it a bit with some ferric chloride and give the blade a good washing before using it for food service though. Still, 8Cr13MoV is way better in a lot of ways than the average cheap kitchen knife stainless.
 
This is a no brainer of a question to me.....if you have a Millie Why would you use
anything else? I've used all of mine(3) for lots of different kitchen duties.
 
i am planning on using my newly ordered MULE in M390 since it's stainless. Right now, I use a Native, but i get tired of being careful not getting water all up in it.

IMO, Millie would be good too.
 
I found a Spyderco picnic knife at a local gunshow a year or so ago, and gave it to my mother. It's her favorite paring knife, and she tried to lay claim to my older Spyderco kitchen knife. Approximately 7" blade, plain edge. I've used my FFG Spydercos to peel apples, but using a for that might be construed as heresy by some :D.
 
Honestly anything open backed and FFG would probably be ideal. The Military, and the Sage I and II would work quite well. I'd stay with stainless steels, with the exception of ZDP-189. I left some onion juice on my Stretch II overnight, and had rust the next day--and onions aren't nearly as acidic as lemons are. I've found S30V to be extremely rust/stain resistant.

If you are working at a bar, you might get some weird looks if you pull out a Military to cut some lemons and limes :)
 
I think the Lum chinese or rock lobster will be good for food prep, since it has wide, long blade. maybe you can use any spydie,just stay away from non-stainless since you use to cut lemon :))
 
I used my millie today to cut an apple at work today.

did you notice any chipping in the blade afterwards? have to touch up the edge on a sharpmaker?

Sorry couldnt help it :) my milli is actually on of my favorite kitchen blades, and its usually in my pocket so its always there:)

VG10 Strech or Rock Lobster would be my choice in that setting
 
The Military or Paramilitary works well and I've used them for food prep. But the one I use most is the Tenacious. The grind works well, I haven't had any rust problems, and if I chip it it's only thirty dollars. I suspect the Resilience will work work very well too.
