From a knife I'd want to use perspective, I like Ben Orford's (Craftlab) knives a hell of a lot. Simple and beautiful and absolutely zero hype. His and his wife's aesthetic are as good as it gets for me. If I ever get around to buying a custom knife from another maker, it'll likely be one of his. But if I was going to buy some big nasty looking thing that I'd be afraid to use, my money is going to Shawn Hatcher. I could probably watch that guy brush his teeth and still learn something.

Others I'm sure I'll remember after I post this....
Chris Reeve, Ernest Emerson, Rick Hinderer and Mike Stewart, assuming he designs all or most Bark River Knives. There are others whose work I admire by way of pictures but not having handled them, I can't say anything past praising their aesthetics.
a few more popular and a few that aren't seen as often but IMHO make terrific knives:
Sam Lurquin
Toni Oostendorp
Andrew Jordan
Lin Rhea
Jim Kelso
Dusty Moulton
Scott Sawby

John Doyle
D'alton Holder
