Hey mate! Really glad to hear the jig is being used by so many people, I'm sure that Neil Charity (the gentleman who originally showed me a similar jig design) would be very happy to know that his work is still helping newer knifemakers!

I'm partial to G10 for handle material, but there are definitely other suitable options out there.

Doing two rows of holes in the jig sounds like a good idea! Best of luck!
