First decent knife

I can see the m390 on the Bradford site. Just not on any Australian seller sites except for one.

I guess that's what you get for living on a island huh? Hahah

There is a knife makers for sell forum that you should check out. There are some great makers here that make different size blades, you may even find one for your needs. The knives are reasonably priced and they'll probably ship to you.

The G3 is a GREAT knife, but if I was dressing lots of game, I think I might prefer the Hidden Canyon. If you have any interest in a folder, the BM North Fork has forward index finger jimping too.

After reading that article, the m390 is definitely appealing over s30v
 
I'm looking at $242 for the Bradford if I buy direct and have it shipped. That's with no sheath.
Under $189 for the BM in S30V with sheath.

Blade shape. Handle geometry.
The G3 is awesome in the grip shown by Aquaholic.
If you like to move your fingers onto the blade "skinner style" (sorry, I don't know the correct name for the grip), the G3 doesn't work so well (kinda bad, actually IMO). Excuse my poor pic trying to show what I mean.

I'm sure you are much more proficient at field dressing than I am. But back when I used to hunt frequently, I spent a lot of time with this sort of grip. The BM's I mentioned work great with this grip due to handle and blade shape--not just because of the forward spine jimping. They were designed to be game knives. See where my thumb is in the pic I posted? Now go look at a good pic of the Hidden Canyon and you'll noticed they even milled a place in the scale for your thumb!

For full transparency, I've handled the BM's a bunch, but not purchased or used them--sadly I don't hunt much any more. Still, I wish I'd had them "back in the day."

The G3 is a better all around utility knife, which is why I have one. But if you're looking for something specific to your purposes, I'd still point you toward the BMs. That's even taking into account M390 vs S30V. Just my opinion, FWIW.

I think you'll find S30V vastly out performs what you're used to.

Incidentially, I was under the impression Bradfords usually came with a sheath. I'm a bit surprised by your post. Maybe it has to do with direct from Bradford vs using a retailer? Of course I could be plain old wrong too! ;-)
 
Ah my bad. They do come with a leather sheath. I saw kydex as an option below and jumped to conclusions.

I'm sure you're right about the S30V being much better than what I'm used to. 7cr17 is what they are I have learned.

Are there any options out there as suitable as the BM in another brand and/or in the better steel options?

I've always been the kind of person to buy excellent products and never or rarely replace them
 
How about barkriver bravo necker in cpm 154 , it would be perfect for what your trying to do . Or a survive gso 2.7 in 20cv , might be a little tougher to find but we'll worth it
 
Bravo Necker in 3v is $232 from knivesshipfree. I'll keep hunting to see if I can find a better price.
Keep going back to the BM hidden canyon. I love it but I feel like I want a bit more for some reason now.
 
I will jump on the bandwagon and recommend the Bradford Guardian 3. I got one with 3D scales a few weeks ago, and it has been on my belt or in my pocket nearly every day since. I've used it for everything from food prep to cardboard to cutting loose strings off the kids' clothes, (but not game cleaning) and it has been fantastic. Next time I break down a chicken, I'll use it instead of my boning knife.

As someone who has mostly used less Spydercos (Tenacious, Kiwi, and Manix) and Moras, there was some sticker shock, but so far I am thinking it was worth the extra expense.
 
The Guardian is definitely super appealing but 4mer_FMF's image puts me off a bit as 90% of use will be gutting and skinning.
 
I can't find a lot on the survive gso 2.7. It looks like its not in production yet?
 
You don't need a large knife, and either a fixed or folder would do well.

I'm biased towards Benchmade folders. I have never had a bad one, and they are not as expensive as other well made folders.

For a fixed blade, a Bark River Bird and Trout or mini Fox River (maybe even a Gunny) would be a great knife.
 
Here is another recommendation for the Bradford Guardian 3. Unbelievably amazing knife for the price. Tough as nails. You will feel 0 need to baby this thing. If someone had a Guardian 3 as the only small fixed blade knife in their whole life they would not be lacking.
 
Did someone mention the Cold Steel Pendleton Hunter / mini Hunter earlier? They seem quite cheap for 3V?
I've not read the best reviews on Cold Steel though
