Top one is based on a Sportsman (Sheffield), lower a (locking) Charolais or Donjon (both from Burgundy). Both very sophisticated.

The buildings are the carreau du Temple, in the middle of Paris, right bank, where once stood the Templars headquarters. It is typical of many covered markets and has a very long story. more pictures here.
