Apologies in advance for not knowing brand/maker of these two blades. The blade on the right hand knife has what appear to sacrificial edges. If so, what do these do for the blade and the cutting ability?

This is what Busse calls "Corrugated Bevel Technology" (CBT). Saves weight, and helps not getting stuck, I guess. See, for instance, https://www.bladeforums.com/threads/thoughts-on-the-corrugated-bevel-technology.691113/ .... Probably also for looks, I suspect ;)
