I think that in the 3 inch range, like dipbait, the most important aspect is an acute point.
The WilderTools knives by Rick demonstrate this.
I disagree with dipbait on the wrap, Rick soaks those with Epoxy, so nothing is getting in there.... You might have to wash them off with a scrub brush, but normal maintenance is always going to be an issue with a knife use for food prep.
