No time to prepare and consume a leisurely breakfast today. A Jimmy Dean turkey sausage, egg and cheese on an English Muffin sandwich will do. Add a little horse radish sauce, a glass of v8 and black coffee and I'm fueled until lunch time.

Our neighbors were out-of-town for several days a couple of weeks ago, and before they left, they gave us a bunch of produce from a "share" in a community garden they work with. An eggplant was included in the garden goodies. My wife knows how to make several dishes that include eggplant, but she had no interest in preparing any of them during the first week we had the eggplant. I've never used eggplant for cooking before, but I hated the thought of the gift from the neighbors going to waste. So I just chopped up the eggplant and some other vegetables (asparagus, onion, green peppers, hot pepper rings, potato), "stir fried" it in olive oil, added some diced summer sausage and a couple of eggs, and called it "eggplant surprise". My wife was surprised, but unimpressed, so I got 3 meals from my invented recipe.
