For wife with arthritic hands, easy opening/closing knife rec?

I like the Benchmade Mini Grip solution that a lot of people have said. Sounds like a good fit! Another option to consider is a fixed blade neck carry. Maybe an ESEE Izula, Tops Tibo or Becker D'Eskabar?

My wife and I both love them, got some from AG Russell, and loved them, but the sheaths were not the greatest and we gave up on them when the knives started dropping out.

Where would I find a medium-decent kneck knife?
 
Given that you both are working on a farm, an appropriate size fixed blade might be the better option.

Yes, fixed are nice, BUT we do go to town on occassion :-) and while in Appalachia a sheath knife is not reason to call the SWAT team, a pocket folder is preferred.

That doesn't mean one can't have more than one knife, however...

Just get a quality sheath made for the neckers you do have. I carry a small fixed in my front pocket every day no prblems at all. You just need a good quality sheath set up for the type of carry you prefer, neck,buckaroo,or belt clip (also works for pockets).

I'm in the foot hills of the Blue Ridge, since VA has an open carry law you can carry a fixed blade as long as it is totally visible. I don't carry a fixed blade any more since I don't hike, backpack, etc. anymore. I always carry one or two folders; a Victorinox Tinker (my fix-it knife) and a Kershaw Drone plain blade assisted opener (they are handy when you use a cane :-)

Give the Opinel (modified like I suggested) a try. I think your wife would like it. And yes, this is how knife collecting starts :-) Before long you'll be buying them by the dozen.

I highly recommend going to a store (or two) that has a nice knife display, and let her actually try a few models before deciding.

I'd steer you towards a piece that uses SpeedSafe, IKBS, or KVT.
