Are the patinas forced? Also what’s available

Kind of? They're not forced in the traditional sense (mustard, vinegar, etc). But when I carry a traditional I tend to go out of my way to eat, and cut up some fruit. Usually apples (or whatever I decide to prep for my toddler). The knives with patina's have seen a couple of apples, some strawberries, and probably some grapes.
