Henckels was one those companies that was known for having bark stag all the way out to the edges. They must have had a lot of flat stag on hand because they also cut the stag to butt up against the bolsters instead of cutting it at an angle. A well known knife expert told me one time that they they also used smoother stag on the side that fits in your hand and rougher on the side were your fingers are. Most of the stag I have on earlier Henckels is also cut thin.
The older the stag the better on most Henckels, pre WWI being the best. By the 1950s the good stuff was largely gone after the factory was bombed.
