German stag?

Henckels was one those companies that was known for having bark stag all the way out to the edges. They must have had a lot of flat stag on hand because they also cut the stag to butt up against the bolsters instead of cutting it at an angle. A well known knife expert told me one time that they they also used smoother stag on the side that fits in your hand and rougher on the side were your fingers are. Most of the stag I have on earlier Henckels is also cut thin.

The older the stag the better on most Henckels, pre WWI being the best. By the 1950s the good stuff was largely gone after the factory was bombed.

Every time you post that picture, Christian, my jaw drops again. That really is some breathtaking stag.

Thanks James. The unfortunate part is that my wife has banished this set from her kitchen. She thinks it gross to use such an old set, especially since we don't really know where it came from (I bought it from EBay for the princely sum of $13.10). I now use it to barbecue in style.

Man...check out Mikes knives..... now THATS what Carl is talking about!!....( just quietly...I would give my lefty for that Henckels fixed blade ).

Christian!!...Oh my ...what a shame not being able to use that stunning, stunning knife in the kitchen...every day I use a my very old Antique Stag carver in the kitchen..not a day goes by I dont, and I have never felt anything less but privileged to use such a great knife daily...its really that good!
 
Olsen in factory actually burnt their Stag...and no this wasnt done by an after-market owner, this is a typical example of what Olsen Solingen did to the Stag...and yet I think the Stag is top notch, and not too over done...this particular 13 inch Olsen is very hard to come by, one of my Favourite fixed blades I have kept......

Actually, I was teasing a bit. My father used to use a similar expression and I found it amusing.

Lol... all good Frank, I figured you were , but I had doubts whether I was pushing it just a wee bit, but getting back to that Henckels fixed blade!!!...that is real nice, in saying that...I am thankful it wasnt taken seriously, I would have lost the lefty quite some time ago!
 
Thanks Duncan and Will. Henckels quit making its own pocketknives around 1960. Boker and Olbertz made them for Henckels after that but one of the ways for telling the difference is the quality of the stag on the Henckels made ones.

Duncan, those fixed blades turn up on a fairly frequent basis on the world's largest online auction site, so you can probably hold on to Old Lefty for a while longer.

I sent Tony Bose an older Henckels steel and he put the stag on this desk knife:

Here is my Henckels carving set. It was dry as dust when I got it so there is mineral oil on the handles in the pictures. I enjoy using it a few times a year.

Beautiful knives, Will! They don't get any better!

That set makes Christmas that much Merrier, Mike! And I can't add anything to that nice desk knife, that isn't apparent!!
 
Wow, that Carving set is just beautiful Mike, thanks for taking the time to show us your lovely knives/set.
There was a thread a while ago and Stag was mentioned, and I made the comment that the very old Sheffield, and German knives quite often had the most stunning Stag I have seen, and this just verifies what I say!

Yes, it's a Carl Schlieper sodbuster with saw. A little rough in the fit and finish department, but a great knife. The saw works really well, too. Since I was buying it sight unseen by phone from [a non-member knife shop], I told them I liked stag with some texture. I think they picked a good one for me.

The problem is that stag is so variable in quality. Even the Germans use so-so pieces occasionally.

This one has pretty good figure, but the color is a bit lacking.

At least the scales are well matched. And it's actually starting to look better now that the stag is starting to yellow.
