As we see some stag is better than others. But, is stag stag ? For those who haven't seen it and without doing search, here is a basic primer on the animal part of stag.

My personal opinion is that the classic look I expect on the old best knives is some of the old 'Red Deer' stag of german makers. U.S. native stag (deer, elk and moose) have a much larger pith in the center than the pin hole size pith of Red Deer. Good Sambar is good also and I would think is more available and likely to be affordable. But I am not the expert here, one fourm reader is one of the top stag providers in the country so be sure to ask questions if you have any. He just reminded me that lots of the dark stag, even the older stuff, was darkened with the application of potassium permangnate.

I cannot be totally supportive of the stag found on the knives of my company of interest(Buck.....) because of apparent side to side differences I have seen too often. I do not like stag with large width and depth grooves.
