Better check the logo engraving too.We all know when we get knives from Jo, how well packed they are and what a pleasure it is to receive those nice, white boxes. The bag is either heat sealed or tied in the perfect knot that is tight enough to stay closed, yet can still be untied by hand. Then the blade is perfectly wrapped in a sheet of foam padding, equally folded and wrapped on both sides. Perfection.

Now, while my photo skills suck, and doesn’t really capture what makes these two special, they are. Both of these have a hollow grind done on an 36” radius. It looks almost flat, until you put a straight edge across the bevel. Sahweeet!
