If you want your wife/girlfriend/partner to enjoy the outdoors like you do, they have to be just as comfortable as you are. You can't be all snug in your $600 Feathered Friends sleeping bag while they shiver in the their $20 Wal-Mart bag. I remember the first serious trip I did with my wife [girlfriend at the time], we were hiking-up to around 6500 ft. in November. She had decent gear [marginal for winter/mountain environments] and I had exceptional equipment. She's was tough, but it was clear that if we were going to continue doing this kind of stuff together, we had to give her a gear-makeover. We dropped at least $1500 within a couple of weeks after that trip: Gore-Tex bibs, Gore-Tex gaiters, new hiking boots, down sleeping bag, new pack ... it was a small price to pay for the many happy years of hiking/climbing that laid ahead. Haha ... she was post-holing through 3 feet of snow with no gaiters ... you can imagine how cold her feet were.
