I would recommend the Spyderco Shaman. GREAT knife and since your sun-in-law to be is starting to get into knives he’s definitely heard of the Shaman, he’ll love it!
 
There have been some great suggestions so far. You couldn't go wrong with the majority of them. Two options I would consider:
1) Custom small fixed blade from David Mary or some one similar from the forum
2) William Henry A2 series. It's their entry level knife as far as price, but a great little knife IMO. Owned one for over five years, non-intimidating for the office, sharp out of the box and has a great action.

What will he use the knife for? I've learned from years of experience what works.

My knife choices for a great gift for a new couple would be to give them a set of highly rated, practical kitchen knives, that they both could use and enjoy working with day after day. Also get a good sharpener like the Spyderco SharpMaker to be used with the kitchen knife set.

I bought the dragon lady a set of these Victorinox Fibrox kitchen knives when we got hitched and she was so pleased that she doesn't hassle me too much about my other boxes of knives.

I am very interested to hear what knife you all would suggest as a wedding gift for my son-in-law. He is brand new to knives and I've been a budget collector for several years. I am really looking for a perfect wedding gift knife for him that would be a bit of a wow factor and just be great knife all around.

I guess in my mind, the budget would be no more than $350. I really have my eye on the Tactile Maverick or something that is classy looking like that. So throw the options out there, unless it is agreed that the Tactile is a great piece.

Pretty tough to recommend a knife without more knowledge about the guy. Is his a blue-collar worker, or a desk jockey? Does he hunt and/or fish? Hike and camp? Does he tinker on cars? Is he a big guy, or slight? Does he live in a big city, or out in the country?

City guy of normal stature. Just graduating college with a business degree. He loves golf, would hunt and fish if someone asked him to. He does not tinker on cars nor do I think he has much of an interest. He loves to carry knives now that I have been getting budget options for the past few xmas' and bdays. So I guess I'm thinking more of a classy piece that is a conversation starter that will catch the attention of those in the know. Like I said earlier, probably something in the Tactile Maverick, Quiet Carry The Nine vein. Although, it makes me second guess it as I don't even own knives that are that nice...

A good piece of advice: Daughters, no matter how old, are ALWAYS going to be Daddy's little girl. Handle wth caution, and don't anger Daddy.
