I have this same challenge, except I need to be able to open and close a folder in sub-zero temps and do it safely, with one-handed opening/closing a definite need at times. My usual preference is a Mili, which is too long for you. Any of the larger fully exposed opening hole folders should work equally well. Not all will close equally easily with gloved hands. Best bet is a back-lock or a caged BBL. I don't usually carry a Manix 2, but they open and close well even with gloved hands and have a very secure grip too. My rec is Manix 2.
