Whether Fixed or Folder, share with us the best preforming edge you've ever had.

I would have to say my Manix 2 LW. Wicked FFG and slices like a dream! An honorable mention would be my Rat 1. Slices amazing too.

A knife I do not own but looks like it would cut crap really good is the Cold Steel American Lawman.
 
Serrated H1 in my aqua salt, Atlantic salt, and spyderhawk is pretty nasty stuff, it cuts like crazy. As far as plain edge, the south fork in s90v with the edge thinned down a little is an incredible slicer.

You should get the Lawman. It s a greaat slicer and holds an edge. Very strong feeling.
 
CCK Cleaver is the best I've personally used. Thin stock, broad blade, and thin grind all come together to make it cut like a dream. That said, it's made for pure cutting efficiency without much in the way of durability. So I love using it to chop veggies or slice meat, but the edge just won't survive much rough stuff.
 
Spyderco Manix Two sprint run with CRUWEAR, sharpened at 30 degrees inclusive to a .5 micron mirror polish. That knife cuts super nice.
 
Agree, my Manix2 LW S110V gets extremely sharp ... and holds it.

But, my new Spyderco Mule 21 in CPM-4V push cut phonebook paper right out of the box. Very impressed with it so far.
 
I have a few that blew me away out of the box.

Benchmade 943 and 581
Spydie PM2 s110v and CTS
All have really impressed the snot out of me!
 
Lots of ways to define cutting performance, honestly. But the first thing that leaps to mind for me is my scythes. When you sweep the blade through dense grass and don't feel so much as an ounce of resistance it's an electric experience. For knives it's hard to beat the wow-inducing properties of a well-honed Opinel, though.
 
The 2 knives out of the box that blew my mind were the Southern Grind Bad Monkey and the ZT0808. These knives are like lasers and resharpen insanely well!

Glad I'm not the only one who realises this. :)

I'll also say the same for my Moras, most of my Cold Steels and my Bucks. Cutting performance has a lot more to do with proper sharpening and geometry than it does the cost of the knife.
 
For me, it would have to be my CRK Insingo. I've never cut anything with it that it didn't immediately pass through with almost no effort.

I have other knives that slice similarly well, but none that I could say was better. Of course, in full disclosure, I keep this thing sharp as I can make it. It gets a few passes on the Spyderco Sharpmaker Ultrafines if I cut anything other than paper with it.
 
best cutting performance ... well ... cutting metal I guess a torch, or maybe a band saw. Cutting wood ... I guess felling a tree would have to be a chainsaw, building a teak table or a teak dive tank rack, I'd have to say a circular saw or table saw. Cutting drywall, a Stanley box knife. Opening a turtle, a Schrade Sharp Finger fixed blade, dressing a deer, the same Sharp Finger and a 7OT, cleaning fish a Rapalla filet knife ... In the kitchen, an Old Hickory paring knife ... removing coconut fronds from the trees, harvesting the coconuts, and opening the #%*##&@ coconuts at the fleamarket, I'd have to go with the Cold Steel "Heavy Machete" (after sharpening. out of the box, it could almost cut air cleanly.)

Yup. My Opinel No.8 Garden knife tied with my standard No.8 carbon, are absolutely the best slicers in my lineup. When it comes to just flat out cutting without needing to pry, dig, baton, or any other such thing, Opinel rules them all IMHO.
 
The best I've ever used is one of my Lg plain standard issue Sebenza 21. This one has a crazy thin grind.
