Greatest Cutting Performance You've Ever Experienced?

The best cutter I have ever had was a Spyderco Military in 440V from the 90's. It seemed like it held an edge longer than any other knife I have had since then.
 
One's that have seen a ton of varied use as garage/around the yard/beater blades:

My waved zdp endura 4; it catches and buzzes through pretty much everthing (heavy zip ties, cardboard, pumpkins ;)) with ease.

My reground Volt; it is zero ground; I added a microbevel for strength; cuts crazy well even completely dull LOL. Cardboard champ. :thumbup:

My zero ground benchmade nimravus in M2; it's seen better days... It looks rougher than it actually is in this pic. Cardboard killa, carver, slicer, dicer.

There are so many. I have to say that i'm rather taken with Elmax used by several companies. I have never had an EDC that held an edge like elmax. Bark River has many options now and ZT has great folders with it
 
A grind that results in a blade being very thin behind the edge is what makes effortless cutting performance:

The Caly 3.5 is a very good EDC. I prefer the ZDP-189 version over the VG-10 version, as it can take and hold a more acute edge.

Between the Caly 3 and the 3.5 I think that the 3.5 wins hands down. I do still keep my CF/ZDP Caly 3 because it has a smaller, more people friendly blade, and because my Dad bought it for me.

Gotta agree with Cobalt. I had a original Starmate in 440V that was awesome, still miss it. For me it was a great steel that got very sharp and stayed that way.

Masamoto yanagi honyaki (head chef let me cut a few slices of fish, didn't feel the fish under the blade at all), probably over $2000
Why he used it at work was strange, they're considered something you hang in your home or something. But I've never used a knife sharper than that one.

Rockstead guy, checking in:) The Shinogizukuri grind on my Chi is very slicey! I like my Higo's Honzukuri grind too, but it doesn't seem as slicey. The Honzukuri grind seems like more of "beater", but time will tell; I just got the Chi and I need more experience with Shinogizukuri.

Out of the box, SAK. All of them.

Best overall is my SYKCo 711 with a thnned convex edge done by Scott Gossman. One tap with a baton and it sailed through two inch diameter big leaf maple. Cross grain. It was a "that just happened" moment.
 
Best chopping performance ever was from my RJ Martin "Blackbird", a close second to which would be the Lile "Mission" at nearly half the 30 ounces of the Martin (the Lile being 17 ounces!), and still around 3/4 the chopping performance...

The Lile Mission and the Randall Model 12 had the best cutting edge geometry of any really big knives I have seen, 0.028" and 0.020" edges respectively, the Al Mar "Special Warfare" being a match to the Randall but with a smaller 7.75" blade. The RJ is 0.040", which is fairly common but sub-optimal for most uses I think, similar to the Chris Reeves one piece range.
