Guesses on November 2022 BOTM?

Nice! I will be trying mine out on Thanksgiving. (I also have the 944 BOTM)

I missed out on the 946 butcher knife. :mad: If I remember correctly, it sold out before I even got a chance to order it. And I am not familiar with the 945 - that one is sweet!
The 945 is awesome, I love the Santoku Blade shape, and use the 3 that I have the most out of all of my Kitchen knives.
So has anyone that owns both this and a regular 931 compared the two?
I am wondering if there's enough of a difference in the grinds while cutting potatoes......
So far it performs well. I chopped pecans yesterday for a recipe my wife was making. It made swift work of that task. I will report back on potatoes maybe Friday, and suspect it will be great for that.
I believe that slicing tomatoes extra thin would be the forte of the Regular 931, but slicing and dicing potatoes and harder stuff will be the forte of the BOTM 931.
That being said the BOTM 931 did great on the tomatoes and onions I diced yesterday.
 
I saw yesterday that about 20 sold in just a few hours, and after a few bourbons, I decided I had to have one.😋

.....this morning, I was still eyeing that cutting board.
So I tracked it down and bought that as well.

I need that cutting board!

So today I tested and found out that this knife cuts potatoes quite nicely.
The shoulder helps break the moisture seal that makes potatoes stick to some thin bladed knives.
That being said it is not as perfect as the standart 931 for thin slicing tomatoes or onions, but yes on dicing them.
 
I'm hoping Bob Taylor/Stella Falone releases an ebony knife block that will hold all these cool knives.
He's made a prototype.

I really like his business model.
 
Did a fair amount of cutting with this for Thanksgiving and the day after.
It'll cut soft stuff and this stuff like a laser! Thick harder stuff you may need to baton...lol

It looks like it's ground higher on the BOTM than their regular cutlery so that might make it more tolerable.

The steel they're using is good for cutlery. Something harder won't respond as well to a butcher steel or ceramic rod.
Exactly what I found. It's a heavy, stout blade. Trying to cut up some squash with it (tough ones, like butternut, acorn, and others). No way - just too thick to do so easily. Used my beater Cold Steel 8" chef's or this stuff.

It's a beautifully made knife that looks great. It's good in the hand and has perfect balance with a pinch group. I have a preference for lighter Japanese style knives so this one is way off - it feels like holding an machete compared to most of my other knives. It's still very good and the hollow grind is different. Potatoes and other foods don't stick it. Slicking and chopping it does very well. Thin slices no so much. For harder and smaller veggies, like carrots, it's fantastic. I didn't cut any meat with it, but I suspect it would fly through it.

I also forgot to sharpen it before using it. It was usably sharp out of the box, but not like my other knives. It would not cut a paper towel, for example. Will try again after I put a better edge on it. My factory edge looks very good. Not sure about the angle - will check with I sharpen. But it's' got a very nice, even bevel for the edge. Somebody experienced and good put the edge on it.

I've used the new one a handful of times in the past week. Sliced through Thanksgiving brisket like butter, wish I had a picture, but I convinced myself a picture would just make me hungry every time I saw it. Much better than the stock chef knives that decorate my kitchen. I've done fresh homefries twice with it, it sliced the taters just right. I wouldn't even attempt a tater with the stock ones. I'm overall impressed, but that's probably because I had my doubts going into it. Looking forward to using it and taking some pictures with my new stella cutting board when it arrives tomorrow, and yes, I had a few bourbons when I pulled the trigger on that bad boy! have a great week everyone!

I sorta wish the handle was bigger round tho.
I'm gonna pass it off as one of the wife's Christmas presents....... But she'll know better.😁

I guess that means I'll have to make another post in a few days. for now, Here are some pics of the more vibrant side, and some deer, and my new 11 month old puppy Otis my wife and I got at the rescue pound a week ago today on Black Friday. Best Black Friday purchase ever for us! Cyber Monday Stella boards are pretty great also!
