Nice picture...I am not envisioning a lot of fileting success with that full SE edge, though...? What's the report from users of the old SE blades?
Hey JNewell I'm here to tell you that the older model AUS-8 Catcherman in full SE was/is a great blade for filleting, field dressing, food prep and many other cutting chores. You see the serration pattern on the AUS-8 Catcherman are markedly different than those you see on most EDC folders of Spyderco's. I've only seen this pattern on the older Catcherman and that bread knife they had back around 10 years ago.
I cut up some deer tenderloins with mine last fall and it was like I was cutting them with a laser beam. Now don't get me wrong I love the PE & CE Catchermans too but this Spyderco SE version is truly near and dear to my heart. Not to mention I use that knife for some kind of food prep at least 2 to 3 times a week and when I travel that knife always goes with me. I want a back up unit for that model so bad and I won't give up till I get one. However it would be better if they brought the Catcherman back in the H-1 Salt Series in both or all 3 variants.
And let me tell you AUS-8 in SE holds it's edge really well. I've probably only sharpened my SE Catcherman 3 times in the past 5 years. If you sharpen it with the Spyderco 701 Profiles that baby stays sharp for a long time with no problem. I do prefer the plain edge on some fillet jobs I won't steer you wrong there at all. But trust me there are many jobs that are done well with the older SE version. Anyone who has one for trade you know how to get ahold of me![]()
