Hard to hurt knife

Welcome to the forums! As someone above already recommended, the Al Mar SERE 2000 is probably one of the best choices in terms of the ergonomics and the smooth action. It is extremely tough, easy to sharpen and would be excellent for all the chores that you have described. I guarantee that you will love this knife in every way. And the price is not unreasonable either for such a quality tool.

I'm a building contractor and if I hadn't gotten the knifemaking bug and started making my own folders the SERE would undoubtedly be my EDC. I gave my dad one for his birthday last year after he had been giving mine the eye and he was so thrilled. He has repeatedly told me that it is the best folder he has ever owned.
 
But for a really tough knife...try a Himalayan Imports Khukuri. These guys start around 3/8" thick.
 
Want a really tough little fixed blade? Try to find a Busse Basic #3. The handle is smaller than the longer bladed Busse Basic variants and the 3 1/2 inch blade cuts well, although I would remove the lanyard hole located where the blade meets the handle as it tends to get in the way (this is not a problem on the larger Busse Basics). Made of modified INFI, Busse Basics are strong and stay sharp, and the Resiprene handle works well in cold weather, although it does get a little slippery when covered in chicken fat, but then what doesn't. They are no longer made, but you can find them on Ebay occasionally.

If you were considering the CRKT Companion you may also want to look at the Camillus CBQ Jr. It has superior steel, fairly stout and a well reguarded sheath. I believe that Camillus droped the price on the CBQ series recently too, as can be seen <a href=http://personal.mia.bellsouth.net/mia/m/e/memi/clients/Camillus/Cudatrifolda.jpg>here.</a>

Many online retailers are still selling it above the new retail price though, so perhaps it's a typo.

I've been able to convince my wife into carrying at least a Spyderco Ladybug, but seeing your EDC's I see I have a long way to go with her...
 
I have a Strider MFS for hiking/biking duty and I can't imagine doing anything to mess this knife up, and it's one of the less-expensive Strider models.

For folders, I recently bought an Emerson mini-commander. Very stout "little" knife.
 
If edge is important in what you do, I'd advise against the CRKT Companion. Not that it's a bad knife - 'cause it certainly isn't - but if you're going to run it hard you might want to get a better steel. My everyday chores are fine by the AUS6M in my CRKT Ryan, but I'm not dismantling fridges or cutting carpet. A "sharpened prybar" might be more fitting.
