I thought RJ's had some sort of appleseed edge. (no idea what that actually means!) Maybe RJ will chime in and explain this!
 
If you look at an appleseed from the side you can see that it kind of gently curves down to a point. From my understanding, an appleseed edge is basically a thin convex and always a heck of a cutter.
 
The Apple Seed is the Japanese Hira-zukuri style blade. Many Tantos were made this way.

I had to look up the term but I do think that the hira-zukuri looks like an apple seed to me. However, I don't thinnk that all apple seed edged knives are hira-zukuri.


The guy who taught me the term had made a double edged dagger, complete with center ridge line and all that. When I looked at it and said "convex grind?" he told me that he didn't know what that meant and that it had an appleseed edge.
 
Yes, I know it is correct. ;) I mentioned it because this statement:

makes it appear that they are one and the same when that is not actually the case.


Leu: This may or may not be entirely accurate but I have always thought of the appleseed edge as just being a very thin convex. Makes for one nice slicer too. I bet a lot of makers fashion knives with this sort of edge even if they don't use the same term.
 
I would second RJ's Japanese stuff. Before I made knives I thought PH blades were cool, once I knew a bit more about knives I thought RJ's stuff was much nicer, at a better price. Not a slam, just a personal opinion.;-)
