IMO, the Military is one of the best knives on the market today. It pockets well, rides well and is a superb slicer. As for kitchen duty, it is a natural and as an added bonus, flip it over and use the flat spine to clear food from the cutting board.
I own several Millies and a GB, all of which are brilliant knives, but the moment you mentioned food, the Military becomes a natural choice.
This is very true. I love using my Military in the kitchen. The GB, having a hollow grind, pretty much sucks at food in my experience. What I would worry about is what you like to do with your knife. If you're going to beat the crap out of it, chop down trees, and punch it through walls, get the Gayle Bradley. The tip is stronger and thicker, therefore less likely to break. I like having a tip on my knives, and breaking one really bums me out. If you're a rational human being and just want a knife that cuts and slices really well, get the Military. I got the Cruwear (they pop up relatively often on the exchange) because, again, I like my tips so toughness is important to me.
Neither of these steels are anything to worry about. I've been forcing myself to use my GB on food so I can get a sort of organic looking patina, and still nothing. It got a little spotted from sweat once, but after a couple onions and pickles the spots were gone. The Cruwear is still spotless, despite being my favorite grilling knife. I like to sample a lot...
These are two of my favorite knives, and are both awesome in their own ways. Whichever one you pick, you will love it. Then give it a week or two, and buy the other one too.
