I am interested in becoming a knife retailer, and wonder where to start, and how much start up $$$ to get a suitable inventory covering a range of brands and prices.

i would imagine you would need to first contact the individual companies and set up a contract for selling their merchandise.

i believe most retail prices are 40-50% above wholesale, so with a good clientele, good location, and good selection profit could be decent.
