A website would be nice, but until you start putting out a lot more knifes I would stay away from it. When you really start advertising and the public sees what great knifes you have, they will be dissapointed if you can't meet their demands. If more people see your knifes and start buying them, it will take me longer to get one.

A small website marketed correctly (and that means cheap or FREE) can reach over 120 search engines and directories easily every month. Increasing link sharing with other sites will get you a better ranking.

It is not just about "key words", if those key words are not in your context they won't do you any good, LOL, I will stop rambling now :)

Anyway YES TO THE WEBSITE!

You need one for documentation, credibility, historical data, contact info, FAQs, etc. It's just really nice to be able to have a simple central point to find model names, photos, what has been made, is available and what is in the works. It will definitely make you more visible which make more demands on your time for orders, but I still think it's a really good idea for anyone who has made a name for themselves in the market the way you have. Yes, you need a site. :)

One more reason you need a website....

The host you're using for your photos is blocked at my place of browsing. If you host your own photos I'll be able to see them before I go home. :D
